Mediterranean chicken burger 

• Level: Easy-moderate 
• Time: 30 minutes  
• Makes: 4 servings 

Chicken mince tastes fabulous jazzed up with Mediterranean flavours and served in a mushroom bun with lettuce and avocado. Perfect served with thyme-baked celeriac fries. This makes for a veg packed, satiating meal. If you can’t get ready minced chicken you can mince fresh chicken using a food processor. The best type of mushrooms to use are the large flat or portobello variety. 

Ingredients  

• 500g minced organic free-range chicken  
• 2 cloves garlic, chopped  
• 2 teaspoons dried oregano  
• 2 teaspoons dried basil  
• 1 teaspoon sea / Himalayan pink salt  
• Zest of 1 unwaxed lemon  
• 1 teaspoon chili flakes 

Other Ingredients 
• 8 large flat mushrooms (eg portobello)  
• 2 medium-large avocado  
• Lettuce leaves  
• Coconut oil or ghee  
• 400g peeled celeriac 

Method 

1. Preheat the oven to 180 (GM4).  

2. Cut the celeriac into batons. Use your hands to mix in a bowl with 1 tablespoon of oil ensuring the batons are coated. Arrange on a baking tray and cook in the centre of the oven for 20 minutes  

3. While the celeriac chips are cooking, mix all of the chicken patty ingredients together thoroughly. Use your hands to divide the mixture into 4. Form into balls and then squash them down to form patties approximately 2cm thick.  

4. Heat 1 tablespoon oil in a pan and cook the patties on a low- medium heat for approximately 7 minutes each side.  

5. Meanwhile carefully cut any stems away from the mushrooms, brush them with a little oil and grill for 5 minutes on each side.  

6. Assemble the burgers - mushroom - lettuce - patty - avocado and another mushroom on top. Serve with the celeriac chips.
